Salsa Chicken Casserole

Ingredients:
1 cup uncooked rice
1 cup frozen corn kernels(thawed)
1(15 oz.) can of black beans
1(16 oz.) jar of salsa
1 cup of chicken broth
1/2 tsp of chili powder
1/2 tsp of oregano

Directions:
1. Preheat oven 375 degrees. Drain and briefly rinse the black beans. Add dry rice, black beans, corn, salsa, chicken broth, chili powder and oregano to and 8x8 dish. Stir until everything is evenly combined.

2. Cut the chicken breasts into three pieces each. Push the chicken down into the mixture. Cover dish tightly with foil. Bake for one hour.

3. After the hour test the rice to make sure it is tender. If not re-cover and bake for another 10-15 minutes. When rice is done, sprinkle cheese over the top and return to oven uncovered for a few minutes. Add sliced green onions if you prefer. Serve hot.
